Enjoy a simple, easy to make jam recipe using a summer seasonal favourite, strawberries! This Gluten Free Strawberry Jam recipe offers an abundance of flavour, with less sugar and is also pectin free.

  • 1 kilogram fresh strawberries trimmed (hulled & sliced in half)
  • 375 g granulated sugar
  • 60 ml lemon juice


  • Place all the ingredients into a large, heavy saucepan and gently heat, stirring until the sugar has dissolved completely
  • Bring mixture to a boil
  • Stir frequently
  • Break down the strawberries with the back of a spoon
  • Use a cooking/jam thermometer and continue to boil, stirring frequently until the liquid reduces significantly
  • Cook until temperature reaches jam set point (220 F/105 C)
  • Let boil at jam set point for a minute
  • Remove from the heat and carefully pour into sterilized jars
  • Top with the lids
  • As the jam cools the tightly screwed lids will create a sterile vacuum
  • Cool completely
