Gluten Free Bread Pudding is a simple solution for using up stale bread.
Most types of plain gluten free bread works, however a brioche style is best suited. We love using day-old sliced Promise Brioche Gluten Free for this recipe too for extra sweetness.

The Art of the Perfect Gluten Free Custard

At the heart of any exceptional bread pudding is the custard. Traditional baking relies on the natural absorption qualities of standard wheat bread, which readily drinks up liquids while maintaining its structure. In gluten free baking, achieving this delicate balance requires a minor shift in technique. Gluten free bread varieties are famously dense or uniquely porous, meaning they require a bit of extra patience to absorb the warm milk, melted butter, and spiced egg mixture properly.

To create an incredibly smooth, melt-in-your-mouth interior, we combine whole milk with melted butter, whisked together with eggs, sugar, comforting cinnamon, and fragrant nutmeg. Heating the milk and butter gently on the cooktop before introducing it to the dry bread cubes helps activate the starches in your gluten free bread. This step ensures that the custard infuses into the very centre of every single cube, preventing those dry, chalky pockets that can sometimes compromise gluten free baked goods.

Choosing Your Gluten Free Bread

The beauty of this dessert lies in its versatility. You can use almost any plain or sweet gluten free loaf you have on hand. For an authentically rich and luxurious texture, a brioche-style gluten free bread, such as Promise Gluten Free Brioche, adds an extra layer of sweetness and a soft, pillowy crumb.

If you prefer a more structured, traditional pudding with a classic bite, rustic white breads work beautifully. Brands like Schär Artisan Baker White Bread provide an excellent, sturdy base that holds up brilliantly to the heavy custard structure without dissolving into mush. If you are using standard sandwich loaves, letting the cubes sit on the counter to dry out or lightly staling them in a low-temperature oven will help them drink up the maximum amount of spiced custard flavour.

Customizing Flavours and Textures

While our standard recipe features classic, sweet raisins that plump up beautifully during the baking process, this dessert serves as an open canvas for your kitchen creativity. If raisins are not your favourite, try swapping them out for fresh sliced Ontario apples, ripe pears, or seasonal peaches to bring a bright, fruity contrast to the rich vanilla and nutmeg notes.

For a truly indulgent twist that kids and adults alike adore, sprinkle a handful of dairy-free chocolate chips and chopped walnuts or pecans into the bowl before transferring the mixture to your baking pan. You can even experiment with your bread choices; using day-old gluten free cinnamon rolls or sweet buns takes the overall flavour profile to an entirely new level of deliciousness.

Baking and Serving Tips

When baking your bread pudding, patience is key. Keep your oven set to 350°F (175°C) and bake uncovered for 45 to 60 minutes. You will know it is perfectly cooked when the top turns an exquisite golden brown, the edges are beautifully crisp, and a knife inserted near the centre comes out completely clean.

Allow the pudding to rest for at least ten minutes after removing it from the oven. This brief cooling period gives the custard time to set fully, making it much easier to scoop and serve. For the final touch, serve it warm alongside a generous pour of fresh vanilla custard, a scoop of vanilla bean ice cream, or a pillowy dollop of whipped cream.

Frequently Asked Questions

1. Can I make this gluten free bread pudding dairy-free?
Absolutely! To create a dairy-free version, simply substitute the traditional dairy milk with a full-fat oat milk or coconut milk, and swap the butter for your favourite plant-based stick butter alternative. Because gluten free bread is already dairy-free in many cases (like Schär), this is an easy adjustment.

2. What is the best way to stale my bread quickly?
If you only have fresh gluten free bread on hand, slice it into cubes and spread them across a large baking sheet. Pop them into a preheated oven at 300°F (150°C) for about 10 to 15 minutes. You want them to feel dry and toasted to the touch, but not browned.

3. Why did my bread pudding turn out soggy?
Sogginess usually happens if the bread cubes weren’t dry enough before adding the liquid, or if the dish was pulled out of the oven a few minutes too early. Ensure your knife comes out clean from the centre before turning off the oven.

4. Can I assemble this recipe the night before?
Yes! You can mix the bread cubes and custard together, pour it into your baking dish, cover it tightly, and store it in the refrigerator overnight. This allows the bread to absorb every drop of flavour. Just let the dish sit on the counter for 15 minutes to take the chill off before baking, and add 5 to 10 minutes to the total baking time.

5. How long does leftovers keep, and how should I reheat them?
Store any leftover pudding in an airtight container in the fridge for up to three days. To reheat, warm individual portions in the microwave for 30–45 seconds, or place the baking dish back into a 350°F oven for 12–15 minutes until warmed through to the centre.

6. Do I need to add xanthan gum to this recipe?
No extra xanthan gum is required! Because we are relying on the structure of already-baked bread and using eggs as our primary binding agent for the custard, you do not need to add any supplemental binders.

I like this recipe with all types of bread. Each kind of gluten free bread creates a slightly different taste. Depends if I’m serving it for breakfast or dessert which bread I use. My favorite is day old cinnamon rolls, especially if the cinnamon rolls have nuts and raisins. Fresh peaches added are nice too. Sometimes I use half-n-half instead of milk. Delicious!
