Many of our everyday recipes (like cookies, muffins, and quick breads) are formulated to work beautifully with high-quality, commercial 1-to-1 (measure-for-measure) gluten free flour blends that contain xanthan gum. However, for complex structures like yeast breads or delicate pastries, we will always specify in the recipe notes if a custom flour blend or a specific brand is required for the best results.

Q3. Why does my gluten free baking sometimes turn out dry or dense?
A3. Gluten free flours absorb significantly more liquid and require more hydration than traditional wheat flour. If your bake is too dry, it is often due to scoop-measuring your flour, which packs too much starch into the cup. We highly recommend using a digital kitchen scale to weigh your ingredients in grams for perfect accuracy.
