Strawberry Ice Cream – Gluten & Dairy Free
Ingredients
- 2 frozen bananas large
- 2 cups frozen strawberries
- 2 cups coconut milk
- 3 tablespoons honey maple syrup or agave work too
- 1 teaspoon vanilla extract
- 1 pinch salt
Instructions
- In a food processor or blender, combine strawberries, bananas and coconut milk for 3 to 5 minutes or until smooth.
- Add honey, vanilla and salt.
- Blend again for 1 to 2 minutes.
- Pour into a freezable container and place in a freezer.
- Freeze it for 3 to 5 hours or overnight.

You can eat it right away as a soft-serve, or for a firmer, more ice-cream like texture, transfer the mixture to a metal container and freeze for about 3 to 4 hours or until firm.

Slice some ripe bananas and strawberries, and arrange in a single layer on a baking sheet lined with parchment paper, pop in to the freezer for about 2 hours! If stuck on sheet, let sit on the counter for a couple of minutes before lifting the parchment paper.
