Classically known as "poor man's pudding" in 13th century England time, this scrumptious bread pudding needed to be converted to be a gluten free staple. Enjoy this delicious gluten free dessert that helps with minimizing gluten free bread waste!
It is time to start collecting those heels and extra slices of bread, and enjoy a classic, old fashioned Gluten Free Bread Pudding!

Ingredients

  • 6 cups gluten free bread cubes soft, about 12 slices
  • 2 cups milk
  • ½ cup butter
  • 3 eggs
  • ½ cup sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • ¼ teaspoon salt
  • ½ cup raisins optional

Instructions

  1. Preheat oven to 350°F
  2. Using a 2-quart saucepan, heat milk and butter over medium heat until butter is melted and milk is hot
  3. In large bowl, mix eggs, sugar, cinnamon, nutmeg and salt
  4. Stir in bread cubes and raisins
  5. Gently stir in milk mixture
  6. Pour into ungreased deep round pan or ramekins
  7. Bake uncovered for 45 to 60 minutes or until knife inserted from edge comes out clean
  8. Serve warm with whipping cream or custard

Gluten Free Bread Pudding is a simple solution for using up stale bread.
Most types of plain gluten free bread works, however a brioche style is best suited. We use day-old sliced Promise Brioche Gluten Free for this recipe.

    I like this recipe with all types of bread. Each kind of gluten free bread creates a slightly different taste. Depends if I’m serving it for breakfast or dessert which bread I use. My favorite is day old cinnamon rolls, especially if the cinnamon rolls have nuts and raisins. Fresh peaches added are nice too. Sometimes I use half-n-half instead of milk. Delicious!
