Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium onion chopped
  • 1 lb ground beef extra lean
  • 1 lb ground pork extra lean
  • 3 sausages chopped
  • 1 can kidney beans drained
  • 1 can pinto beans drained
  • 1 can black beans
  • 3 cans crushed tomatoes
  • 1-2 medium carrot cubed
  • 1 cup celery chopped
  • 1 cup bell peppers chopped
  • 1 cup corn
  • 1 cup mushrooms minced
  • 2 ½ tablespoons chili powder
  • 2 tablespoons cumin ground
  • 2 tablespoons tomato paste
  • 1 tablespoon garlic powder
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper ground
  • ¼ teaspoon cayenne pepper ground

Instructions

  1. Add olive oil to a large soup pot and place it over medium-high heat for two minutes.

  4. Add the chili powder, cumin, tomato paste, garlic powder, salt, pepper, and cayenne.

  5. Stir until well combined.
  6. Turn crock-pot on low heat and transfer meat mixture into crock-pot.
  7. Add drained & rinsed beans and crushed tomatoes.
    1 can kidney beans, 1 can pinto beans, 1 can black beans, 3 cans crushed tomatoes
  8. Add vegetables.
    1-2 medium carrot, 1 cup celery, 1 cup bell peppers, 1 cup corn, 1 cup mushrooms
  9. Cook on low for 6-8hrs and serve.

    I did steps 1& 2 on the stove top then moved it to the crock pot and added the remaining of the ingredients (including a small diced sweet potato). Left it on low for 3 hours and it was perfect.

    Can’t remember if I’ve posted a glowing comment about this recipe but I love it. A great way to enhance this recipe is make giant corn muffins with a deep cup silicone muffin tray and put the top half of the muffin on top of your bowl of chilli. Its a lazy, delicious pot-pie like chili bowl.

    This recipe was great and approved by my whole family! This includes my husband who hates beans, my very selective 4 year old and and my 3 year old who is willing to try anything but will also just as quickly spit it out if he disagrees with the taste.
