- 1 cup celery chopped
- 1 cup peas
- 1 cup corn

- 2 teaspoons thyme
- 1 tablespoon parsley
- 2 tablespoons cornstarch *gluten free
- 1 teaspoon salt
Instructions
- Add ground meat, onion and carrots to pan with oil/bacon fat.1 1/2 pounds extra lean ground beef, 1 onion, 1 cup carrots, 1 tablespoon extra virgin olive oil/bacon fat
- Fry over medium-high heat until the meat is browned.
- Add ground meat, onion, celery, and carrot to the pan with oil/bacon fat.1 1/2 pounds extra lean ground beef, 1 onion, 1 cup celery, 1 cup carrots
- Add peas & corn, and cook for about 3 more minutes.1 cup peas, 1 cup corn
- Add gluten free cornstarch (sub for sweet rice flour optional) as a thickener and stir to blend.2 tablespoons cornstarch
- Stir in tomato paste, gluten free Worcestershire sauce, beef stock, thyme, and parsley.1 tablespoon tomato paste, 1 tablespoon Worcestershire sauce, 1/2 to 3/4 cup beef stock, 2 teaspoons thyme, 1 tablespoon parsley
- Cook until the mixture is thick and all vegetables are tender.
- Remove from heat and set aside.
- Heat oven to 375 F.
- Fill a large saucepan about half full with water.
- Add 1 teaspoon salt and bring to a boil.1 teaspoon salt

- Drain completely.

- Spoon meat and vegetable mixture into a 1 1/2-quart baking dish.
- Spread mashed potatoes over the top of the meat.
- Bake in heated oven for about 30 minutes or until the potatoes are golden brown.

This is a phenomenal recipe! Highly recommend! We add extra Worcestershire sauce since the word is long and hard to pronounce and it enhances the flavor! We really enjoy this recipe.. we never have peas on hand, so I use canned string beans and cut those in half so they’re more the size with the carrot pieces. What I like about this dish is I can make the mashed potatoes during the day so when it comes time to preparing the meat it seems to be a lot easier… even though it’s technically the same amount of work and time… 🤣😉

It is pi day 3/14 and so of course we have to have pie for dinner and what better pie than shepherd’s pie — made with lamb. Yummy and easy recipe. I used fresh carrots and frozen green beans, corn and peas and used chicken broth rather than beef — came out beautifully. (oh and I do it in a 9 inch pie plate for pie day.

I love this dish! I’m all about the shortcuts so I use ready made mashed potatoes and frozen mixed vegetables. Cook the beef as instructed, heat the vegetables and mix with the beef and spread on bottom of baking pan, heat the mashed potatoes and add the cheese then spread over the beef mixture. top with the remaining cheese and bake! My dad wants this every time he comes over!
Great recipe! I used the leftover veggies in the fridge…corn and broccoli, and it worked! I followed the tips and used Worcestershire instead of broth. I only had 1/2 and 1/2, but still added so much depth. I wanna try adding red wine too. I went heavy on everything! It’s very forgiving! 2 quart casserole? Peshhhh! I changed it up a bit my son doesn’t like onions but he does like corn so I browned the ground beef added Worcestershire sauce ketchup salt pepper canned corn and canned gravy I thickened it with flour because I did not drain the grease it was scrumptious!

This is the best recipe for a ton of nice flavors. Also before putting thin in the oven I top the potatoes with shredded Cabot’s sharp cheddar cheese and I use 4 larger red potatoes with 12 tablespoons of butter all baked in my 12 inch cast iron pan.
