2 ½cupschopped tomatoesor 2 15oz cans of chopped tomatoes
2cupswhite mushroomschopped
5-6fresh basil leaveschopped
Saltto taste
Pepperto taste
Instructions
Heat a large skillet on medium heat
Put in 1 teaspoon of olive oil with onion & garlic
Cook until cooked through or becomes translucent
Add dried oregano, chopped tomatoes and remaining olive oil.
Stir all together and continue on medium heat for about 10-15 minutes or until tomatoes break down into a sauce.
Add chopped mushrooms
Cook for another 5-10 minutes
Add fresh basil right before serving
Serve with your favourite gluten free noodle
